Hi Stuart
Thanks for your very succinct viewpoint.
It's true that the Appellation d'Origine Contrôlée (AOC) is supposed to guarantee a wine's place of origin but it also governs its methods of production. The CIVC (Comité Interprofessionnel du Vin de Champagne)'s own website also states , in answer to the question- Which grape varieties are permitted in Champagne?
"Since the beginning of the 20th century, researchers have been trying to identify the best quality vine plants. They have singled out three premium grape varieties that are worthy of inclusion in the composition of the Champagne wines. The grape varieties authorised in Champagne are : Chardonnay, Pinot Noir and Pinot Meunier."
So true Champagne also needs to have been made in a certain way ie 'Méthode Champenoise', and can only have been made from all or any of the 3 authorised varieties.
