Vert jus is very mild and tastes a little like sherry. It is not acidic like ordinary vinegar; it is fermented and has an alcoholic content of 10 .5%. This makes it an effective carrier of flavours like garlic, herbs and lemon juice. It makes a delicious dressing with olive oil and a little lemon and sugar.
It has been made in France since medieval times from crushed and strained unripe grapes. We are the only producer of Vert Jus in the UK.
